Be careful, this cake will defeat you. I pride myself in the fact that when it comes to cake, for a skinny girl I cant out eat ANYONE!

Coconut caramel date slice. Gluten free
I love slices, there not something I typically bake, I don’t know why? Maybe because typically they contain a lot of sugar. Not this one, the coconut and dates take care of that.
I adapted this recipe from the edmonds cookbook, unglutanised it and tweaked the recipe. Im really happy with the result as is everyone who has tasted it.

Chocolate Whiskey Ice Cream with toasted Almonds....
I have very fond memories of this ice cream, when I was a teenager, 16, 17 or so and (legally) to young to drink, my best friends (older and there for cooler than us) brother would make this ice cream when home from law school. He would sneak us a bowl of it after dinner and swear us to secrecy.

This cake is all kinds of delicious, the dates really add a lovely caramel sweetness to the cake while the walnuts give a really interesting earthy taste.
I love these types of recipes (soak the dates first) because you don’t need alot of sugar or other flavors to make something really special.
