Chocolate blueberry mud cake with marscapone cream frosting. Gluten free.


Be careful, this cake will defeat you. I pride myself in the fact that when it comes to cake, for a skinny girl I cant out eat ANYONE!
Then about half way thru my slice I needed a break and a big glass of water!
The cake is moist and rich, the frosting is sweet and smooth and the blueberries give a perfect tough of tart freshness.

So go make the most of the last of the summer berries, we are nearly in Autumn!!

Orange and almond plum cake. Gluten free.

Last week my family and I had a lovely time house sitting on the east coast of New Zealand for my good friend Delissimon, we had a great little holiday, being lazy and catching up on family time!

One of my high lights was raiding the plum ad citrus trees for this delicious cake. I got the recipe from Delissimon’s cookbook-made with love, I used orange instead of lemons and turned it into a upside down fruit cake. Between 2.5 of us, it was gone in 15 hours…….

This recipe was one of my first blog posts, Peanut butter granola bars. It one of those staple recipes every house should have and its my go to recipe when baking for friends that have just had a baby, these are protein filled and great for breast feeding mums!
So when we went to visit Mike, Lucy and 2 week old Ollie I knew what to take!
I’ve refined the recipe a fair bit, simplified the ingredients.

Lemon Coconut cakes

This loaf tin is my latest junk store find, I love it, my great aunt use to have one just like it. It reminded me of her famous coffee cake, I had to relive that memory.

I served it for desert tonight with homemade baileys ice cream….best flavor combination…I think so!

Coconut caramel date slice. Gluten free

I love slices, there not something I typically bake, I don’t know why? Maybe because typically they contain a lot of sugar. Not this one, the coconut and dates take care of that.

I adapted this recipe from the edmonds cookbook, unglutanised it and tweaked the recipe. Im really happy with the result as is everyone who has tasted it.

Chocolate Whiskey Ice Cream with toasted Almonds. Gluten free

I have very fond memories of this ice cream, when I was a teenager, 16, 17 or so and (legally) to young to drink, my best friends (older and there for cooler than us) brother would make this ice cream when home from law school. He would sneak us a bowl of it after dinner and swear us to secrecy.
I think this ice cream would be delicious with or with out the whiskey….personally I prefer the adults only version!

Whats great about this recipe is that the whiskey stops the ice cream from fully freezing, your left with this rich and decadent soft serve. Yumm

Still on the hunt for the best Christmas cookie recipe. I feel like all we have eaten is cookies for the last few weeks, it’s kinda been a bit of an overkill!
I also made some yummy chocolate whiskey ice cream for our ice cream cookie sandwiches. Yes it was divine, yes I will post the recipe soon!


This it a great versatile recipe„ it makes yummy crisp cut out cookie, and soft larger cookies which I rolled in icing sugar before baking (Chocolate snow flakes) or dipped in chocolate after they had cooled.


I think this recipe is the winner for the chocolate cookies and these are the winner for the ginger cookies.
