Hot cinnamon chai tea cookies. Gluten and egg free.

My favorite thing to do at the moment is curl up on the couch while the baby boy is sleeping and eat cookies and drink tea.
My flavor of the month is Hot Cinnamon tea by Harney and sons. It’s a surprisingly spicy and deliciously sweet tea which made the prefect flavor base for these cookies.

These would make a great Christmas present, simply wrap stack of cookies with twine, so simple and rustic.

I do love my ribbon and twine.

Red bean espresso brownies…..
Adzuki beans or Red beans are very popular in Asia, they are a common ingredient in sweets and cakes. Often the beans are cooked with sugar and turned into a paste and used as a filling. It is so popular that in 2009 Pepsi created a red bean flavored soda!
Adzuki beans are high in nutritional minerals such as iron, magnesium, potassium and folic acid. Not to mention a great source of fiber.

This is my new go to recipe, it’s healthy, and easy! I love one bowl recipes, minimal clean up, and you don’t need any specialty gluten free flour!

I love my life, im not gonna lie. I have a beautiful son, we play, sing, go for walks. At the moment my life is very relaxed and I love it.
My favorite thing to do when baby naps, is bake, for him, for me, for our extended family and friends. Normally it’s something sweet but this time I wanted something savory and sharp.
I made large diamonds for the adults and small hearts for little hands.
These crackers were perfect, I love inverting recipes, it’s always a bonus when they work first time round!

Ice Cream! Gluten free.

One thing that annoys me about this festive time of year is, well the festiveness of it all!
I live in New Zealand, it’s summer here at Christmas time! It’s great, wouldn’t change it for the world, our traditions are, BBQ’s, going to the beach, taking the kids for a swim, cider in the sun and ice cream!
Why oh why do I see endless snowy festive scenes all over town? Fat jolly Santa under a thick blanket of snow, children wearing winter woollies singing carols to neighbors, friends drinking hot cocoa around the fire place?!? This confuzzles me, come on New Zealand, be real!

This post is probably as close as it’s going to get to Christmas cheer, I got the colours right hu!

Almond carrot cake. Gluten and Dairy free.

First let me say how much I love my new (second hand) cake stand!
Secondly, how great is spring!?! Flowers, colour, warmer weather, jandels/thongs/flipflops (whatever you call them), it’s by far my favourite season, followed closely by Autumn!

I found this old enamel bundt tin just lying around the house, I love it, im really into enamel bake ware at the moment. I love that it’s solid, I love the simple design and colour.

This recipe is great and naturally gluten free, almond meal, carrots, egg, honey and oil with a few spices. That’s pretty much it. Rich, healthy, high protein and fiber.
Did I mention that the giant yellow ‘flower’ on the cake is actually a slice of dried pineapple!

…now that’s clever!

Sugar cut out cookies. Gluten free

I got this gorgeous little cookie cutter last week and was dying to try it out, isn’t it sweet.
I’m also in the process of perfecting my sugar cookie recipe leading up to my Christmas baking….I have big things planned people, big things! Watch this space!

I piped the cookies using the flood technique. I thing it gives the nicest finish as the cookies have a lovely rounded, full look. Much nicer than fondant! I then topped them with white nonpareils, so simple, so cute!
Also did you know that if you add a few teaspoons of corn starch to your cookies is stops them from spreading!

Pear and ginger frangipane tart. Gluten free

I love that pears are popping up in the fruit store again. I mean there in supermarkets year round imported from whoknowswhere, but when they hit my Asian grocers I know there in season!

Traditionally frangipane tarts have a sweet pastry base with an almond paste and what ever fruit pressed into it. I wanted to add something to give this a bit of warmth because lets face it, were not in New Zealand summer yet. So ginger it was, and it worked a treat. So yummy served with Greek yogurt. I could have eaten the whole thing!

Pear date and walnut cake. Gluten free

This cake is all kinds of delicious, the dates really add a lovely caramel sweetness to the cake while the walnuts give a really interesting earthy taste.
I love these types of recipes (soak the dates first) because you don’t need alot of sugar or other flavors to make something really special.

Oh and if you don’t have pears, apples can be used instead.
