Brown butter pancakes with chai spiced apples. Gluten free

I love Sundays. A morning of tea, pajamas and pancakes.
I was up a few times in the night with baby, I found myself drifting off to sleep with recipe ideas and flavor combinations floating around in my head and taking me in to my dreams.
I decided on brown butter pancakes because they are simple to make, the browned butter adds a depth of flavor. Nutty, and aromatic.
I thought Chai spiced apples would go well with the pancakes. I have been making Chai tea from scratch as the months have been getting colder. Cinnamon quills, nutmeg and cardamon. Yum.

The recipe is below
Brown butter pancakes
45 g butter
1 Tablespoon honey
1 1/2 cups flour
1 1/2 teaspoon baking powder
1 pinch of salt
1 egg
1/2 buttermilk
1/2 cup water
Apples
3 medium apples
1/4 cup water
2 cinnamon quills
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 tablespoon brown sugar + extra to serve
Place the butter into a small saucepan, turn the heat on low to melt the butter. After the butter has melted keep it on the heat for another 3-5 minutes, until the butter has a light brown colour, be careful not to burn it.
In a large bowl, sift the flour, baking powder and salt.
In a separate bowl whisk together the egg, buttermilk and water.
Slowly add the wet mixture into the dry and mix until incorporated.
Start cooking your pancakes. I prefer to use a cast iron pan, they retain the heat so well!
While your pancakes are cooking, prepare the apples.
Peal, core and slice 3 apples. Place them in a saucepan with sugar, cinnamon quills, ground cinnamon and ground nutmeg. Bring to a simmer and let cook until the apples are tender but not mushy. Serve with more brown sugar.
