Honey and chocolate buttercream cookie sandwiches. Gluten free.

These cookies may look familiar, they were after all my last post.
I love how versatile they are! Whether you simple sandwich some butter cream between them, coat the back in chocolate or sprinkle them with hundred and thousands before baking? The options are endless.
In fact last night we spread a thin layer of nutella on one and placed a generous spoon full of coconut ice cream on top…it was divine!
You can find the cookie recipe here, as for the filling you can use any butter cream recipe you like. I used a chocolate peanut butter recipe adapted from the sprinkle bakes cookbook.
