Peanut butter ice cream with a nutella swirl. Gluten free

Quite possibly my favorite flavor combination, peanut butter and chocolate. Typically I post recipes that are on the healthier end of the spectrum, however I cannot claim that this ice cream is ‘good’ for you in a nutritional sense, I can however say that it is good for you soul!
It’s rich and decadent, the salty extra nutty peanut butter is matched perfectly by the smoothness of the nutella. To top it all off I served them in chocolate bowls! Luckily im young and don’t have a cholesterol problem (yet).

The bowls were really easy to make, I just melted some whittakers dark chocolate over a double boiler then coated silicone cupcake liners with the chocolate, leave them to set over night (not in the fridge) and pop them out and into a airtight container in the morning.

Peanut butter and nutella swirl ice cream
100 g caster sugar
200g brown sugar
55g salted butter
300ml cream
500ml milk
5 egg yolks
1 teaspoon vanilla paste
8 Tablespoons extra crunchy peanut butter
1/2 cup nutella
Place both of the sugars on a large saucepan, add the butter and place over a medium heat, stir consistently until the butter has melted and the sugar is slightly caramelized.
Add the cream and continue heating for a few minutes, turn off the heat.
In a separate bowl whisk the egg yolks and peanut butter together, add a ladle full of milk to the egg and whisk, add a ladle full of the hot cream mixture and whisk, continue slowly adding the hot cream mixture until the egg until the egg mixture is tepid.
*It is important to do this step slowly, too fast and the egg will scramble.
Pour the remaining milk into the cream pot followed by the egg mixture.
Return the pot to the heat and gently heat over a medium heat until the mixture thickens slightly.
Strain the mixture into a clean bowl, create an ice bath for the ice cream mixture either in a larger bowl or in the sink.
When the mixture is tepid, pour the mixture into your ice cream maker and mix according to the manufacturers instructions.
Soften the nutella in the microwave, pour the ice cream into your freezing container, pour the nutella into the ice cream and stir slightly. Freeze.
